I was never "officially" diagnosed but after 6 years of having "Chronic Fatigue Syndrome", and the gluten-free diet fixing it in 1WEEK, I've never gone back. I had a gastroenterologist tell me a couple of years ago after a scope that I had the healthiest gut he's ever seen and to go home, eat pizza, and be happy!! Well, since pizza would render me incapable of caring for my children, I wrote him off and never went back. Shipping a decorated cake across the country could be a small fortune! Even cupcakes would be crazy - because they have to be frozen solid, and shipping air-express in a cooler (which ends up being a big box. And with AIR shipping the size of the box is the main determinant of price.) We've had some bad experiences with decorated cakes getting ruined in shipping, too, so I don't know if it's a good idea.
