Yikes! We have too many products already — I’m thinking of cutting out a couple of muffins even — but we HAVE to make room for a few last things. Please tell us what’s important to you!
1. YEAST-FREE, SUGAR-FREE BREAD - we get a lot of requests for this one, but I think it’s impossible! We can make yeast-free CRUMBS, and yeast-free SPONGY PUDDING, and a few different varieties of yeast-free ROCKS, but gluten-free, yeast-free BREAD seems to be eluding us. What we CAN make, however, is a nice yeast-free flour tortilla. Anyone want a burrito?
2. GF-OAT BREAD MIX, TO SHIP. Ever since word got out that we’re making a kosher gf-oat bread, we’re getting flooded with requests from Orthodox Jewry across the continent. But it’s crazy to fly baked bread to Miami, or Toronto, or even Denver. And let’s be real: Y’all don’t care if it’s baked, you only care that it’s oats! Make it yourself - just add 2 cups water and 2 teaspoons of oil.
$7 for approx 22oz. bag, makes a single 2lb. loaf or 4 mini loaves.
(Includes 4 Novacart mini-loaf pans, while supplies last.)
Ships GROUND, but refrigerate it when you get it.
(Oats have high protein content - treat oat flour like ground nuts.)
3. SUGAR-FREE — ??? Cookie? Tartlets maybe? (Or is that too grown-up?) Does anyone worry about natural sugar in fruit? Should we sweeten with agave, or xylitol, or something new???
Sugar-free gets requested second only to yeast-free. (In fact, that’s usually how the question goes; “Do you have any yeast-free or sugar-free items?”) But we only have room for ONE more thing. What should it be?

Hi Sandee! if it has a hechsher on the package, I would buy the GF oat bread mix, for sure. I would also buy cookies or tartlets or anything else that’s made with whole grain flours and alternative sweeteners (xylitol or agave are best since I don’t like to eat artificial sweeteners too much).

I definitely vote for the yeast free category. I feel your pain… gluten free and yeast free… it may be asking for too much. I’ve thought of experimenting with a soda bread concept, but haven’t gotten there yet.

LIZKNITS, we went there a couple times. Didn’t like it much - very dry & crumbly, and the taste is off. But you might have a better trip!
I’m not sure about the tortilla, either. TJ’s has a gf-flour-tortilla (not kosher but it looks good), and Food for Life too (haven’t tried it but I like the brand.) So what’s the point?
GLUTEN-FREE BAY - Welcome! After getting certified, we started working on proper labels with the hechsher and nutritional analysis (and bar-codes, etc.) Things never go as quickly as I think they will but those labels are finally at the printers - I hope they’ll actually be on our FOOD right after Pesach!
Interesting about xylitol. We called Emerald Forest a few months ago. They’re a big manufacturer, the only one our regular natural foods distributor carries, but they said they are not kosher certified and have no plans to become kosher certified because “there is no market for kosher xylitol.”
A small, local, natural-ingredients company just got certification for their xylitol, which is what kicked this question up again. I’ve never used it though. Any tips?

hi sandee. obviously (since i’m in new zealand) i won’t be stopping by to buy any products… but i thought i’d put in my 2 cents anyway!
we often get asked for sugar-free baked goods, which is much easier said than done. we use xylitol in a sugar-free version of our golden macaroons, but a lot of people are detered by the chemical-sounding name (xylitol, that is, not macaroon…) and others don’t like the fact that it’s a sugar alcohol. i’m working on another cookie which is sweetened only with dates. doesn’t stay as fresh for as long as sugar-sweetened goods, but you definitely can’t have everything!

Alice! Thanks, as always, for your helpful advice! (I am laughing about the name “macaroon…”) We actually had some New Zealanders in here a few months back. I asked if they knew of your bakery and they did, they heard you’re excellent! but they’re from Christchurch, not Auckland, so they’d never been in! So ironic that they were in HERE, and not THERE!
